Two higher very small plots of Mencia located in Espanillo 750 meters, the average age of vines is 80 years old.
Soil:
The soil is decomposed slate with sandy areas, the ground worked in an artisanal way, on a small scale with three passes with plows pulled by two cowsand a caterpillar.
Elaboration:
After a hand harvest in boxes, the grape is fermented in whole bunch and crushed with the feet , fermented in open barrel of 400 L . Then moved directly into a barrel of 600L where it remains until bottling. The aging period is 12 months for the vintage 2012. The bottled without filtration is done with a slight clarification.
