Mencia plots are located in Espanillo from 700 to 850 meters, the average age of vines is 80 years old, about 5 ha of surface.
Soil:
The soil is decomposed slate with sandy areas, the ground worked in an artisanal way, on a small scale with three passes with plows pulled by two cowsand a caterpillar.
Elaboration:
After a hand harvest in boxes, the grape is checked, de-stemmed and crushed. Then moved directly into foudre of 5000L where it remains until bottling. The aging period is 11 months for the vintage 2012. The bottled without filtration is done with a slight clarification.
